Shepard’s Pie

This recipe was originally made vegan.  You can substitute with non-vegan ingredients, but give it a try “as-is” first and see what you think.  You may be delightfully surprised and have a delicious meatless entree option.

Ingredients
Mashed Potato Topping
  • 3 Lbs Gold Potatoes Peeled and diced
  • 1 Tbl Vegan Butter Or quality butter of choice
  • 1/2 C. Unsweetened Almond Milk Or milk of choice
Gravy Mixture
  • 1 1/2 C. Frozen Peas
  • 1 Lb Cremini Mushrooms Rinsed and sliced thin. You can also use white button mushrooms
  • 2 Large Carrots Slice in half lengthwise, and then slice thin.
  • 1 Medium Yellow Onion Dices
  • 4 Cloves Garlic Minced
  • 1 Lb. Lentils, Brown or Green Or other meat substitute or meat of choice.
  • 2 C. Low Sodium Vegetable Broth
  • 2 Tbl Tomato Paste
  • 1 Tbl Organic Corn Starch
  • 2 Tbl olive oil
  • 1 Tsp Thyme
  • 1 Tsp Rosemary

Instructions
  1. Preheat oven to 375 degrees.
Mashed Potatoes
  1. Boil the potatoes till fork tender ~ 20 mins.
  2. Drain the potatoes and return to pot.
  3. Add the butter, let it melt.
  4. Add the milk and mash the potatoes.
  5. Salt & pepper to taste.
  6. Set aside and move on to make the Gravy.
Gravy (Guts) of the Pie
  1. In a bowl whisk the vegetable broth, tomato paste & corn starch, set aside.
  2. In a large pan heat the olive oil.
  3. Add the onions and carrots, cook on medium till tender ~ 5 mins.
  4. Add the meat substitute, garlic, herbs and cook till the mushrooms have softened and lost their fluids.
  5. Add in the peas and broth mixture from the bowl, cook until the liquid has a gravy like consistency.
Assemble Pie
  1. Place the gravy mixture into a 9x11 casserole dish.
  2. Place the mashed potatoes on top of the gravy mixture, spread evenly with spatula.
  3. Bake for 30-35 mins.
