Bananas over Coconut Cheesecake
Looking for a healthier "cheesecake" option?  Here it is.  Instead of dairy fat, this recipe uses healthier fats from coconut.  The coconut flavor is not overwhelming; the bananas provide a good balance.

Crust
  • 3/4 c. Oats To ensure gluten-free, get gluten-free oats
  • 3/4 c. Pitted Dates
Cheesecake
  • 1 c. Fresh Young Coconut Meat
  • 1/2 c. Liquid Coconut Oil Melted and slightly cooled
  • 3 Tbl Coconut Nectar
  • 2/3 c. Unsweetened Shredded Coconut
  • 2 Lemons - Juice
  • 1/2 c. Raw, unsalted Cashews Soaked or unsoaked
  • 1 Frozen Banana
  • 1 tsp. Vanilla Real extract, not "vanilla flavor"

Instructions
Crust
  1. Pulse the oats in a food processor until they are the consistency of flour.
  2. Add the dates to the oat flour and process until it begins to stick and form crumbles.
  3. Press mixture into a 6" springform pan.
Cheesecake Filling
  1. Blend the cheesecake ingredients until smooth (I used the food processor).
  2. Pour mixture over crust.
  3. Either refrigerate over night or quick chill it in the freezer for 2-3 hours.
Recipe Notes

If you choose to freeze, make sure and allow it to thaw for around 15 minutes before slicing; otherwise it will be like cutting through a rock.

Despite all of the coconut, this cake tastes more like banana.  The larger the banana, the more banana flavor.  I haven't yet experimented with other flavors, but I imagine you could add other frozen fruit to add a touch of other flavor like berries, mango, pineapple, etc.  Keep in mind, the frozen banana gives the filling a more frozen texture to start with and aids in setting.
